Most of the Mediterranean counties, Greece, Lebanon, Syria, Israel, Jordan, (as well as Iran) have many dishes in common. Baklava, a sweet dessert pastry of honey layered with filo dough is one common dish. Lentil stews and soups, with carrots, onions, celery and spices are another category of common cuisine. Lamb in a variety of forms, such as shish-kabob and kibbe, pine nuts, salads of cucumbers, tomatoes, onions . . . all form the delicious gastronomic core of this large geographic region.
